Ahhhh.....cookies. I do love a cookie, don't you? I must say that after finding out that I was gluten intolerant I developed an absolute love for baking. But sometimes gluten free isn't enough. I took this cookie straight to Paleo and I must say that it was delicious! Notice the dark flakes on the dough, that is from the almond flour. The recipe called for blanched almond flour but I didn't have any so regular almond flour it was. They came out a little grainier than I had anticipated but they were reallllly good! I think I'll try to make a Mexican chocolate cookie next for the family. I am addicted to the Mexican wedding cookies but I haven't found a good gluten free recipe. Anyone out there have one to share? I'd love some help!
Now I will tell you that I had attempted to dip these babies in white chocolate and sprinkle them with peppermint pieces but if you're familiar with Pinterest and check out their "fails on baking" then you can imagine what these actually looked like after the fact. Hahaha!!! I would've shared a funny pic but my son actually loved the taste and ate them before I could build up the courage to snap a photo! Till next time mis amigas y amigos!
