Let me introduce myself, my name is Carmen Moreno and I love LA! I have lived in LA county most of my life, born and raised in Pasadena CA and ventured out no further than 30 miles before coming back to LA. Being an LA gal you would have to assume that I am a major foodie and you are correct! Mexican food, check; Asian food, check; Italian food, check; fusion foods, double check.....you get the hint.
Unfortunately I have hypothyroidism.....bummer. Many years in denial and refusing to take the medication has led to some issues that were out of my control. I could no longer eat whatever I wanted, I had zero energy, my limbs feeling very heavy and I felt like a zombie for most of the day. I would spend sleepless nights trying to figure out why my stomach was always tight and bloated. I'd wake up with brain fog, lethargic after eating anything that contained gluten or sugar. I didn't have the energy to get dressed and ready for work so I'd get up at the last minute and wear whatever was in arms reach. It all started becoming very depressing and numerous visits to my doctor provided no relief.
I started doing my own research and self-diagnosed myself. I started what would be my interpretation of an elimination diet to see what would happen. Now, I know many people do not believe that gluten intolerance is a real issue but it is. I felt and saw the difference in and on my body. I will not lie and say that I am not tempted by foods that are made with gluten and I will still occasionally indulge but not without consequence. We are but many fighting the same battle and I will make it a point to share recipes that have worked for me.
So I will continue to be the foodie I was born to be but I will now make smarter, healthier choices and hope you join me on my journey.
