So I had decided that for Valentines Day I would make red velvet mini cupcakes, beets and all. As you can see, there is nothing red about these! "I must change the name" is what I said. Don't let the lack of color fool you as these were absolutely delicious!!! I Ended up calling them Cool Velvet minis. I made these specifically for the people at work and I must say, they were a hit!
Instead of using butter in the recipe, I used coconut oil. Maybe I used a bit too much since it was going through the wrapper. I also found a really cool recipe for a cream cheese buttercream frosting and it was so good that I was eating it as I was piping it. getting back to the cupcake itself I don't think it picked up the red color because I just puréed and mixed in the beet to the batter. Someone told me I should have mixed it in with the sugar, kind of like making a simple syrup. I'll make sure to try that next time. The flour mix I used was from Authentic Foods and it's been the best to use for this type of cupcake. Yes, I agree it is a bit late for this post but I had to share!
