Good morning all. I hope your Friday has been wonderful so far! So, I have been a bit under the weather lately, my thyroid decided it was going to control me this entire week and I've been feeling so blah..... Enough of that though! My sons favorite thing to eat for breakfast are sliced potatoes lightly fried in coconut oil and sprinkled with a pinch of pink Himalayan sea salt. Now, with potatoes we must have bacon! This bacon you see here I bought at Trader Joe's and it's their package of bacon ends. At $2.99 you'd think you were really just getting scraps, but noooo! Sometimes you'll even get a long and thick piece of bacon that cooks up perfectly. Eggs...well, I love eggs and to me breakfast is not breakfast unless you have one of two things, eggs or pancakes. I always add something different to them depending on what we had the night before. Here you'll see I added fresh cut jalapeño, tomatoes, spinach, green onion and bell pepper. Pretty healthy right? Now, although the entire breakfast I would not consider extremely healthy, I was able to avoid adding any unnecessary carbs to this meal and let me tell you, it was so satisfying! This could be considered Paleo, right?
